Diadema olive oil

Appellation: I.G.T. Toscane

Centilisation: 50 cL bottle presented in a smart and elegant black box.

Vinification: The trees are pruned once in two years. The olives are harvested by hand in various stages depending on the ripeness between late October and mid November. They are brought to our press house for processing the oil the same day the olives are picked. Leaves are separated out. Then the olives are washed and crushed under the traditional granit millstones.
Hydraulic presses then squeeze the oil before it is centrifuged to separate the oil from the olive water.
During the entire process the olive oil stays at a cold temperature. Finally the oil is stored in stainless steel tanks which are located in a dry, climate controlled storage area.

Every detail of the label has been designed and produced with painstaking attention and professionalism:
- The printing dies and production process are totally Italian and of the highest quality.
- The adhesive utilised for the labels was designed for use in the aeronautics industry.
- The insertion of Swarovski crystals in the vintage date and in the label is carried out by expert craftsmen in Italy.
- Every single label is meticulously inspected for quality before application to the bottle.

History: Villa l'Olmo is based in Impruneta in Tuscany. The estate produces Extra Virgin olive oil since the first half of the 18th century. The olive orchards cover 23 hectars of the estate. We´ve got the varieties Moraiolo, Frantoio and Pendolino.

Tasting: Fattoria Villa l'Olmo's Extra Virgin Olive Oil is produced by a rigorous selection of olives grown on our Tuscan estate. The oil offers a deep green colour with a golden yellow shimmer. Aromas of perfectly ripe olives fascinate from the first smell. The oil is very complex with nuances of smooth almonds, a delicate fruit and some spicy tastes. It got a long finish with a pleasant bitter note.
